If you are a big fan of whole grains but haven’t been eating wheat berries you’re missing out. A wheat berry is the whole grain in wheat flour. Wheat berries just need to be simmered in hot water to soften them in order to be eaten. Adding these “berries” to your diet can improve your fiber intake as well as protein, the latter being a huge benefit for those on a vegetarian or vegan diet. Wheat berries go well in both sweet and savory dishes so don’t be afraid to experiment. They are great in salads and stews with beans.
